May recipe: potato cakes

This month's recipe uses farm-grown ingredients including potatoes, oilseed rape and wheat to create a delicious treat.
Ingredients
650g potatoes
4 table spoons cooking oil (we like rapeseed oil)
2 table spoons milk
175g plain flour
15g butter
Method
- Peel and chop the potatoes, put in a large pan of boiling salted water for 15-20 minutes.
- Drain the potatoes and steam to dry. Warm the milk and butter in a pan over a low heat. Mash to combine and leave to cool.
- Stir the flour and mash and add a pinch of salt and pepper. Roll into walnut-sized pieces and flatten slightly.
- Heat the oil in a large frying pan over a medium heat. Fry the flattened potato balls for 2-3 minutes on each side. Press down to create discs and cook until they are golden and cooked through.
