This Easter, guests in our holiday cottages could find ingredients and the recipe for some delicious mini egg cookies.

March recipe: Easter cookies

Using farm-grown ingredients, get closer to the farm with this simple recipe.


100g unsalted butter

125g golden caster sugar

1 large egg

½ teaspoon of vanilla extract

200g self-raising flour

Pinch of salt

100g mini eggs (chocolate chunks are a great alternative)


  1. Preheat the oven to 170°C and line your baking tray with greaseproof paper.
  2. Beat the butter and sugar until pale and creamy. Crack in the egg, add the vanilla extract and mix well. Then sift in and fold through the flour and salt.
  3. Put the mini eggs into a food bag and break them up using a rolling pin. Next, fold these into the cookie dough mixture.
  4. Roll the dough into balls and place, evenly spaced, on your lined baking tray. Cover and chill in the fridge for around 15 minutes.
  5. Flatten the dough sightly with your fingers, then place in the hot oven for 10-12 minutes, or until lightly golden.
