March recipe: Easter cookies
18 March 2024This Easter, guests in our holiday cottages could find ingredients and the recipe for some delicious mini egg cookies.
Using farm-grown ingredients, get closer to the farm with this simple recipe.
Ingredients
100g unsalted butter
125g golden caster sugar
1 large egg
½ teaspoon of vanilla extract
200g self-raising flour
Pinch of salt
100g mini eggs (chocolate chunks are a great alternative)
Method
- Preheat the oven to 170°C and line your baking tray with greaseproof paper.
- Beat the butter and sugar until pale and creamy. Crack in the egg, add the vanilla extract and mix well. Then sift in and fold through the flour and salt.
- Put the mini eggs into a food bag and break them up using a rolling pin. Next, fold these into the cookie dough mixture.
- Roll the dough into balls and place, evenly spaced, on your lined baking tray. Cover and chill in the fridge for around 15 minutes.
- Flatten the dough sightly with your fingers, then place in the hot oven for 10-12 minutes, or until lightly golden.
